Dark Roasted Peanut Butter and Oatmeal Raw Cookies

Ingredients
  • 1 cup rolled oats
  • ¼ cup desiccated coconut
  • Pinch of salt
  • ½ cup raisins
  • ½ cup prunes
  • 1 vanilla bean, seeds scraped
  • 2 tablespoons dark roasted peanut butter
  • 1 tablespoon water
  • ½ teaspoon cinnamon
Method

Place the rolled oats, desiccated coconut and salt in a food processor and blitz until a fine crumb forms. Reserve 1/3 of the mixture. Now add the dried fruit, scraped vanilla seeds, peanut butter, water and cinnamon and blitz again until combined. Form walnut-size balls with wet hands and then roll in the reserved oat and coconut mix. Chill or eat immediately.
