Ingredients
  • Fish Curry Powder
  • 1 cup Coriander Seeds
  • 5 tablespoons Cumin Seeds
  • 2 teaspoons Black Pepper
  • 15 pieces Dry Red Chilli
  • 1 teaspoon Turmeric Powder
  • 1 handful Curry leaves
  • Chicken Curry Powder
  • 2 tablespoons whole Coriander Seeds
  • 1 tablespoon whole Cumin Seeds
  • 1 Cinnamon stick
  • 10 Cardamom Pods
  • 1 tablespoon Fenugreek
  • 1 teaspoon whole Black Pepper
  • 5 dried Chillies
  • 1 handful Curry Leaves
  • 2 tablespoons ground Turmeric
Method
  1. Toast each spice individually till almost smoking point except the ground turmeric
  2. Set aside to cool
  3. Grind them together in a dry blender
  4. Sift, store in an air tight container
