Dry Aged Steak with Black Pepper Sauce and Homemade Chips

  • 250 grams Sirloin steak
  • ½ clove Garlic, chopped finely
  • 1 tablespoon coarse Black pepper
  • 1 teaspoon White Pepper
  • 1 tablespoon good quality Butter
  • ½ tablespoon Mustard
  • 1 cup Thick Cream
  • Salt and Sugar to taste
  • 1 large Russet Potato
  • 1 cup Vegetable oil (for frying)
  1. Trim fat off the steak and rub with coarse salt and let its sit on a tray in the fridge for at least 24 hours until its dry to the touch
  2. Take steak out of fridge at least 30 minutes before serving. Sprinkle more salt and black pepper on to the steak. Add some oil in a pan and heat up until it’s smoking hot. Add in steak and leave for at least 30 counts before turning it every 10 counts until its golden brown
  3. Remove and set it on a tray to rest before slicing
  4. In the same pan, add chopped up garlic and fry until fragrant. Add cream and reduce heat to a simmer before adding coarse black pepper, white pepper and mustard. Season with salt and sugar
  5. To make the fries, cut potato into long strips. Heat up oil in a pan and fry potatoes until crispy. Drain and then sprinkle some sea salt
