  • Beef ingredients:
  • 200 grams Beef Fillet, sliced across the grain
  • 2 tablespoons Light soy sauce
  • 1 tablespoon Dark soy sauce
  • 1 tablespoon Ginger juice
  • 1 teaspoon White pepper powder
  • 1 tablespoon Corn-starch
  • 1 tablespoon Vegetable oil
  • Noodle ingredients:
  • 300 grams Thick rice noodles (Kway Teow)
  • 4 tablespoons Light soy sauce
  • 1 tablespoon Dark soy sauce
  • 2 tablespoons Oyster sauce
  • 1 teaspoon Sesame oil
  • ½ Yellow onion, sliced
  • 2 stalks Spring onion, cut into 2" lengths
  • 3 cloves Garlic, minced
  • 100 grams Bean Sprout
  • 7 tablespoons Vegetable oil
  1. In a bowl, combine beef with all of the ingredients and set aside until needed.
  2. Heat 3 tbsp of oil in a wok and sear beef slices over high heat until half cooked. Remove and set aside.
  3. In the same wok, heat another 4 tbsp of oil. When the oil starts smoking, throw in the garlic and onions until softened and fragrant.
  4. Next add in the noodles to the wok, stir-frying over high heat for 1 minute.
  5. Add in light soy sauce, dark soy sauce, oyster sauce and sesame oil, tossing together all the ingredients to mix well.
  6. Add in the beef, continue stir-frying over high heat for another 2 minutes.
  7. Lastly, toss in the beansprouts and spring onions until they start to wilt and dish up to serve.
