Ingredients
  • 4 Star anise
  • 6 Cloves
  • 2 Cinnamon sticks
  • 8 Garlic cloves
  • 10 Ginger slices
  • 4 Galangal slices
  • 3 teaspoons Five spice powder
  • 2 teaspoons White pepper
  • 6 tablespoons Light soy sauce
  • 2 tablespoons Dark soy sauce
  • 2 teaspoons Rock sugar
  • 4 Spring onion stalks
  • 4 cups Water
  • 1 whole Duck
  • Steamed rice to serve
Method
  1. In a deep pan with some cooking oil, fry the star anise, cloves and cinnamon for a few minutes
  2. Then, add the garlic, ginger, galangal, five spice powder, pepper, light and dark soy sauce, rock sugar, spring onion and water into the pan together with the duck
  3. Bring to a slow boil then simmer on low heat and half way through, turn the duck over
  4. Cook until the duck is tender, this should take about 30 minutes
  5. Cut into bite size and serve with rice
