  • 100 grams Cod
  • 2 Eggplant
  • Cauliflower Puree
  • 300 millilitres Chicken stock
  • 300 grams Cauliflower
  • 100 grams Leek
  • 2 cloves Garlic
  • 150 millilitres Cream
  • 100 grams Butter
  • Chives
  1. Eggplant Wrapped Cod:
  2. Season the cod and pan fry with some oil in a pan and cook for 3 minutes on each side until fully cooked
  3. Slice the eggplant length ways and pan fry until brown with some oil
  4. Season to taste. Wrap the cod with the cooked eggplant strips
  1. Cauliflower Puree:
  2. Slice the leeks and garlic and dice the cauliflower
  3. Boil together with the chicken stock until completely soft
  4. Pour into a blender together with the liquid and puree until smooth
  5. Pour back into a pot and add in the cream and butter
  6. Season to taste
  7. Slice chives and add into the cauliflower puree
