  • 1 kilogram Beef ribs
  • Water
  • 160 grams Ketchup
  • 140 grams Tomato paste
  • 50 grams Cider Vinegar
  • 20 grams Worcestershire sauce
  • 15 grams Molasses
  • 5 grams Sea salt
  • 2 grams Black pepper
  • 0.5 gram Cayenne pepper
  • 2 teaspoons Onion powder
  • 1 teaspoon Garlic powder
  • 30 grams Honey
  • 20 grams Brown sugar
  1. Trim the sinew of the ribs and pack into zip lock bag, ensuring that air from the inside is removed
  2. Fill a pot with warm water and set it over a low fire, regulating the fire until water touches a stable 85°C. Sink bag of ribs in and leave for 12 hours, checking on water level and temperature once in a while
  3. To make the glaze, add ketchup, tomato paste, molasses, black pepper, brown sugar and honey in a bowl, and whisk together
  4. Add in onion powder and garlic powder, then continue to whisk
  5. Then add in Worcestershire sauce and cider vinegar. Whisk and season with salt and cayenne pepper
  6. After 12 hours and when ribs are done, pre-heat oven to 250°C
  7. Take ribs out of the bag and slice in between bones. Place onto a tray for glazing. Using a brush, apply glaze generously
  8. Move glazed ribs onto a rack in a baking tray
  9. Place ribs in oven at 250°C for 10-15 minutes. Once surface is crispy and slightly darkened. Remove and serve
