Fish in Hot and Sour Sauce - Plah Neung Manao ปลานึ่งมะนาว

Ingredients
  • 1 Sea bass (small to medium size)
  • 5 tablespoons Lime juice
  • 3 tablespoons Fish sauce
  • 2 teaspoons Sugar
  • 2 tablespoons coarsely chopped Garlic
  • 2 tablespoons coarsely chopped Chilli
  • 1 Lime
  • 1 Red spur chilli
  • 5-6 Coriander Leaves
Method
  1. Add fish, lemongrass and galangal to hot steamer rack steam until it's almost cooked.
  2. Combine fish sauce, sugar, chopped garlic and Chilli in the bowl. Mix it well
  3. When the fish is almost cooked, pour the fish liquid out and add the sauce mixture on top of the fish. Cover the lid and cook a little bit more until fish is cooked
  4. When serving, add some coriander leaves, a lime wedge and a thinly sliced spur Chilli as garnish
