Fish Soup

  • Yield 4 servings
  • 800 grams Snapper Fillets
  • 6 Prawns
  • 2 bunch of Chinese Broccoli or other Leafy Green
  • 8 green Tomatoes
  • 2 litres of Water
  • 8 cloves of Garlic, peeled and finely sliced
  • 1 bulb of Ginger
  • 5 teaspoons Salt
  • 1 teaspoon Chicken Stock Powder
  • 5 Chillies
  • 1 handful of Champignons
  • 1 small Cabbage
  • 1 small handful fried Shallot or Garlic
  • 2 bunch Coriander
  • Mashed Anchovy
  • Dried Shrimp Paste
  • Fish Sauce
  1. Pop the prawns into a large pot and cover with the 1-liter of water. Bring to boil and simmer gently for 15 minutes
  2. Strain the stock into a clean pot, discarding the head and shells
  3. Add the mashed anchovy, dried shrimp paste, garlic, fish sauce, pepper, salt, sugar and stock powder and bring to a gentle simmer for a minute or so before adding the fish to liquor along with the Chinese broccoli
  4. Gently simmer until the fish is cooked, about 5 minutes. Add the green tomatoes to the broth and serve
