Fish Tacos wth Cilantro Lime Cream and Avocado Tomato Salsa

  • 4 soft Corn tortillas
  • 2 Fish fillets
  • ½ cup Sour cream (full fat)
  • 2 Limes
  • 1 bunch fresh Cilantro
  • 2 Shallots
  • 1 Tomato
  • 1 Avocado
  • 2 teaspoons ground Cumin
  • Green chilli
  • Sea salt
  1. Pre-heat oven to 180 C
  2. When ready, line baking sheet with fish fillets and heat according to package instructions
  3. Chop cilantro finely, and add to sour cream with juice of ½ a small lime, and a pinch of sea salt. Set aside
  4. Cube avocado and dice tomato (remove seeds if desired)
  5. Combine tomato and avocado with cumin, pinch of sea salt, finely chopped Chilli, chopped shallots, and juice of ½ a small lime in a bowl. Set aside
  6. Sprinkle water onto tea towel to dampen
  7. Place stack of tortillas onto towel, wrap into a bundle, and heat in microwave for 1.5 min
  8. To assemble, spread cilantro lime cream onto each tortilla, break up a fish fillet into flakes and top with cream, avocado salsa, and enjoy!
