Fragrant Fried Prawns
Prawns cooked to perfection, coated with a fragrant sweet and spicy sauce. Definitely finger lickin’ good!

Ingredients
  • 1 kg fresh prawns
  • 2 stalks lemongrass, finely sliced
  • 1 torch ginger bud, finely sliced
  • 5 chili padi (bird's eye chili), sliced
  • 3 kaffir lime leaves, finely sliced
  • 1½ Tbsp oyster sauce
  • 2 Tbsp tom yam paste
  • 1 cup canned tomato sauce
  • 1 egg, beaten
  • 1½ Tbsp mayonnaise
  • 3 Tbsp chili sauce
  • 2 Tbsp sugar
  • 2 Tbsp white vinegar
  • 3 Tbsp cornstarch
  • 1 tsp honey
  • ¼ cup Water
  • Salt to taste
  • Cooking oil for deep-frying
Method
  1. Make the marinade:
  2. In a bowl, mix together 1½ tablespoon of oyster sauce, 1 beaten egg, 3 tablespoons of cornstarch and a pinch of salt
  1. Marinade the prawns:
  2. In a bowl, mix the prawns with the marinade and set aside for 15 minutes
  1. Deep-fry prawns:
  2. Deep-fry the marinated prawns until golden brown and drain on kitchen paper
  1. Cook the sauce:
  2. In a separate wok, heat 1 tablespoon of oil and sauté 2 stalks of sliced lemongrass, 1 finely sliced torch ginger bud and 5 sliced chili padi until fragrant.
  3. Add 2 tablespoons of tom yam paste, ¼ cup of water, 1 teaspoon of honey, 3 tablespoon of chili sauce, 2 tablespoon of sugar, 2 tablespoon of vinegar and 1 cup of canned tomato sauce. Season with salt and stir well.
  1. Mix prawns in sauce:
  2. Add in prawns and mix thoroughly.
  1. Stir in mayonnaise and lime leaves:
  2. Remove from heat and stir in 1½ tablespoon of mayonnaise and 3 finely sliced kaffir lime leaves
  1. Garnish the dish:
  2. Garnish with finely sliced kaffir lime leaves and serve hot
