Fried Chilli Sardines

  • 2 Potatoes (peeled and diced into small cubes)
  • 3 Red Onions (sliced)
  • 1 Cinnamon stick
  • 1½ tablespoons Chilli Powder
  • 2 Cloves
  • 1½ teaspoons Curry Powder
  • 1 can Sardines in Tomato Sauce (discard bones and tomato sauce)
  • 2 teaspoons Salt
  • 1 Baguette (sliced)
  • 1 tablespoon Olive Oil
  • 3 tablespoons Plain Yogurt
  • 10 grams Mint Leaves (chopped)
  • 10 grams Coriander Leaves (chopped)
  1. Heat up sufficient oil to deep fry the potatoes. When golden brown, remove and season with some salt, set aside
  2. Heat up a pan, fry sliced red onions, cinnamon stick, chilli powder, cloves, curry powder until fragrant.
  3. Add in the sardines and potatoes
  4. Continue to fry until well incorporated
  5. Season with salt to taste
  6. Toast the baguette to even browning on both sides with olive oil
  7. Mix the yogurt, mint and coriander leaves together in a small bowl
  8. Top the yogurt mix on top of the baguette and scoop the sardine in a ball form and place it over the yogurt mix
