  • Technique Frying
  • Preparation Time 10 minutes
  • Cooking Time 15 minutes
  • Yield 4 servings
  • 4 unripe, green plantains or bananas
  • 4 cups vegetable oil for frying
  • 1 tablespoon smoked paprika
  • 1 tablespoon garam masala
  • A pinch of salt
  • A pinch of pepper
  1. Using a mandolin or sharp knife, slice the plantains (or bananas) into very thin slices, about 1/8-inch thickness
  2. Pour the oil into a large, heavy bottomed pot and heat it to 350°F
  3. Oil level should come one third of the way up the sides of the pot. If there is too much oil, it will overflow when the chips are added
  4. Alternately use a deep fryer
  5. Fry plantain (or banana) slices in batches in the hot oil until crispy and golden, about 2-3 minutes
  6. Stir them a bit while they fry to prevent them sticking together
  7. While plantains are frying, stir together the smoked paprika, garam masala and salt and pepper
  8. Remove the plantains and drain on a paper towel-lined baking sheet
  9. Sprinkle with the spice mixture
  10. Plantain chips can be cooled and stored in an airtight container for up to 10 days
