Garlicky Chicken and Mushroom Fried Rice

  • Yield 2 servings
  • 2 cups cooked Japanese rice
  • 10 cloves Garlic, finely chopped
  • 250 grams minced Chicken
  • 150 grams fresh Shiitake mushrooms, stalks removed and thinly sliced
  • 3 Spring onions, chopped
  • Sauce:
  • 3 tablespoons Japanese soy sauce
  • 2 tablespoons Sugar
  • 4 tablespoons Water
  1. Stir the sauce ingredients together, until the sugar has dissolved
  2. In a wok or large frying pan, heat up 3 tablespoons of cooking oil over a medium heat. Fry the minced chicken until almost cooked through. Add the shiitake mushrooms and garlic and toss to coat
  3. Pour in half of the sauce and cook until the mushrooms are softened and the chicken is cooked through
  4. Add 1 tablespoon of oil, then the cooked rice and toss to coat. Pour in the remaining sauce and cook until everything is evenly combined
  5. Stir in the spring onions, and serve
