Green Bean and Prawn Omelette

  • 4 Eggs
  • 1 cup of Long beans, chopped
  • 1 Red chilli, chopped
  • 1 clove Garlic clove, chopped
  • 1 cup fresh Prawns
  • 1 tablespoon dried Prawns, soaked in water
  • 2 tablespoons Oil
  • 1 tablespoon light Soy sauce
  • Salt and Pepper to taste
  1. In a bowl beat 4 eggs and season with pepper and a pinch of salt
  2. In a non stick pan, add oil and fry chopped garlic and chilli
  3. Once fragrant, add soy sauce and prawns. Toss for a few minutes before adding long beans
  4. Once prawns start turning pink, add the egg mixture and make an omelette
  5. Flip your omelette. Tip: If you’re not confident flipping it as a whole, cut your omelette into quarters using your spatula and flip each quarter individually
