Green Curry Baked Rice

Ingredients
  • 2 tablespoons Butter
  • 2 tablespoons Plain flour
  • 3 tablespoons Green curry paste
  • 200 millilitres Coconut milk
  • 2½ cups cooked Japanese rice
  • 200 grams minced Beef
  • ½ cup Green peas
  • 2 cloves Garlic, finely chopped
  • 1 tablespoon Fish sauce
  • 2 Eggs
  • 1 cup shredded Mozzarella cheese
Method
  1. Preheat the oven to 200C
  2. Add 1 tablespoon of cooking oil to a large pan over a high heat, and fry the minced beef until cooked. Add the garlic and peas and saute, then stir in the fish sauce. Set aside
  3. In the same pan, melt the butter over a medium heat and add the plain flour. Stir together until thickened. Add the green curry paste and fry until fragrant
  4. Pour in the coconut milk and stir until thick. Add the minced beef and pea mixture to the curry sauce
  5. Add the rice into the curry mixture and stir to combine. Take the pan off the heat. Taste and season with salt if necessary
  6. Butter the insides of two individual-serving casserole dishes. Scrape the rice into the dishes, creating a small well in the centre
  7. Scatter the cheese along the outside of the top of the rice, leaving the well empty
  8. Crack one egg into each well. Bake for 15-20 minutes, until the egg is just cooked, but the yolk is still runny
