Grilled Chicken Satay with Spicy Peanut Sauce

  • 375 grams skinless boneless Chicken
  • For the marinade
  • 2 Shallots, minced
  • 2 cloves Garlic, minced ¾ cup finely chopped shallots
  • 1 tablespoon packed Palm
  • ¼ teaspoon Black pepper
  • 2 tablespoons Peanut or Vegetable oil
  • 1 tablespoon Fish sauce
  • 1 tablespoon Soy sauce
  • For the peanut sauce
  • 2 teaspoons Vegetable oil
  • 1 clove Garlic, minced
  • ⅔ cup Chicken broth
  • ½ tablespoon Hoisin sauce
  • 3 tablespoons smooth Peanut butter
  • 1 teaspoon Sweet Chilli sauce
  • 1 teaspoon Soy sauce
  • 2 Thai Chilli, thinly sliced
  • ¼ cup unsalted roasted Peanuts, chopped
  • 12 8-inch Bamboo skewers
  1. Cut chicken into ½-inch wide strips and set aside. Combine the marinade ingredients together in a bowl. Add the chicken and stir to coat. Marinate in the refrigerator overnight
  2. To make the sauce: Place a small saucepan over medium-high heat until hot. Add the oil, swirling to coat the bottom. Add the garlic and cook, stirring, until fragrant, about 10 seconds. Add the broth, hoisin sauce, peanut butter, fish sauce, and Chilli garlic sauce and bring to a boil
  3. Reduce the heat to low, and simmer until thickened, 4 to 5 minutes. Stir in the Chilli and peanuts. Set aside
  4. Skewer 3 – 4 pieces of chicken onto a bamboo skewer and set aside on a plate. Repeat process with remaining chicken and skewers. Grill chicken, turning, until cooked through, about 5 minutes total. Serve with peanut sauce on the side
  5. Grill skewers, turning over once, until chicken is cooked through, about 4 minutes total
