Grilled Lotus Leaf Chicken 荷叶烤鸡(富贵鸡)

Ingredients
  • 1 whole Chicken
  • 2 teaspoons Preserved vegetables
  • ¼ Onions
  • 2 pieces small Red onions
  • 1 piece Mushrooms
  • 1 bowl Bak kut teh spice
  • 3 tablespoons Soya sauce
  • 1 bunch Spring onions
  • 1 slice Ginger
  • 2 tablespoons Yellow rice wine
  • 1 bowl Sugar
  • 2 tablespoons Oil
  • 1 tablespoon Oyster sauce
  • 3 whole pieces Lotus leaf
  • 1 bowl Plain flour
  • 1 pot Hot water
  • 2 pieces Clear plastic sheet
Method
  1. Remove the chicken tail. Break the chicken bones
  2. Slice a thin piece of ginger. Mash it. Mash the star anise. and spring onions
  3. In a bowl, place the spring onions, the soya sauce, the yellow rice wine, sugar and marinate them with the chicken
  4. Slice the red onions into thin slices. Do the same for the onion and the mushroom
  5. Pour oil into the pot. Place the red onions, onions and mushrooms to fry. Pour in the preserved vegetables. Pour in 1 tablespoon of soya sauce
  6. In a bowl, mix 2 tablespoons of soya sauce, 1 tablespoon of oyster sauce, 1 teaspoon of sugar, 1 bowl of rice wine, 1 teaspoon of black pepper. Pour in the chicken soup
  7. Line a tray with the plastic sheet with the lotus leaf on top. Place the chicken on top. Stuff the fried ingredients into the chicken. Stuff the bak kut teh spice packet inside the chicken, at the edge. Pour the mixed sauces onto the chicken Wrap the chicken up with another clear sheet and another layer of lotus leaf. Tie it up with a string
  8. Pour the plain flour into a big bowl. Add hot water and mix. Pour in ¼ bowl of sugar. Knead the flour with a rolling pin to flatten it. Wrap the lotus with the chicken with the flour
  9. Line the baking tray with aluminum foil and wrap the chicken with aluminum foil. Place this inside the oven at 200 degrees for 2 hours
  10. Use a scissors to create a lid and open up the dish
