Grilled Squid with Garlic Chilli Oil

Ingredients
  • 600 grams large Squid, gutted and clean
  • 3 large cloves Garlic
  • 2 Bird's eye chilli
  • 1 stalk Spring onion
  • ¼ cup Extra virgin Olive oil
  • 2 medium sized Potatoes
  • Salt
  • Pepper
Method
  1. Score potatoes across horizontally and vertically Place potatoes in a pot of salt water and boil it
  2. Clean the squid and slit the head open. Peel of the wings and score the wings. Sprinkle on black pepper and salt and drizzle on olive oil
  3. Place squid on a hot grill and cook it for 4 minutes. Keep turning to cook both sides. Remove once the squid has turned a nice brown
  4. Slice spring onion, garlic and bird eye Chilli into thin slices. Keep the white and green part of spring onion apart
  5. Once potatoes are ready, drain out the water and set-aside with luke water
  6. In a flat pan, olive oil. Add in garlic, Chilli and white part of spring onion. Stir-fry it until the spring onion turns translucent. Sprinkle some salt and turn off the stove. Let the hot oil sit for 1 minute to cook the garlic
  7. Remove the skin off the potatoes and cut the potatoes into slices
  8. Cut the squid into strips and it will most likely curl up
  9. For serving, lay the potato slices on a plate. Place the squid and squid tentacles on top of potato slices Drizzle on the spicy garlic oil Garnish with green part of spring onion
