Grilled Tiger Prawns with Salted Egg

Ingredients
  • 7 tiger prawn, remove the shells, tail intact
  • 2 centimeters ginger
  • 1 garlic
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • ½ teaspoon corriander seeds
  • ½ lime, juiced
  • Salted Egg Sauce:
  • 2 boiled salted eggs, take the yolk
  • 100 grams of butter
  • 1 garlic clove
  • 7 curry leaves
  • 1 tablespoon sugar
  • &frac116; teaspoons gr of pepper (a pinch)
  • Serving:
  • Crispy fish skin
Method
  1. Mix crushed ginger, crushed garlic, soy sauce, sugar, sesame oil & corriander seeds
  2. Marinate the prawns with the mixture
  3. Add lime juice
  4. Grilled the prawns
  5. Dipped the grilled prawns into the sauce
  6. For plating, add crispy fish skins (optional) for texture
  7. Ready to serve
  1. Salted Egg Sauce:
  2. Put the butter into a pan and let it melt
  3. Add garlic and curry leaves, fry it
  4. Add salted egg yolk
  5. Mix everything together until the salted egg mixture is very smooth
  6. Add sugar, pepper
