Ingredients
  • 350 grams Chicken
  • 1 stalk Lemongrass, bruised
  • 3 slices Ginger
  • 6 cups Water
  • 2 teaspoons Salt
  • Seasoned Rice
  • 2 tablespoons Vegetable oil
  • 1 walnut-size Shallot, finely chopped
  • 1 teaspoon minced Ginger
  • ½ teaspoon minced Garlic
  • 1½ cups Long-grain Rice
  • 2 cups Chicken broth
  • ½ teaspoon Sesame oil
  • Ginger Sauce
  • ⅓ cup grated Ginger
  • 3 tablespoons Broth
  • 1 teaspoon Salt
  • ½ teaspoon Sugar
  • 1 teaspoon Sesame oil
  • 3 tablespoons Cooking oil
  • Chilli Sauce
  • 2 fresh hot Red chillies
  • ¼ cup Chicken broth
  • 1 tablespoon minced Garlic
  • 2 tablespoons Lime juice or Tamarind water (made by soaking 2-½ tablespoons tamarind pulp in hot water for 10 to 15 minutes and extracting the juices)
  • 6 Cilantro stems
  • 1 Green onion, chopped
  • ½ tablespoon chucking Garlic sauce
  • ½ teaspoon Sugar
  • 2 tablespoons Vegetable oil
Method
  1. To cook the chicken, place chicken, water, lemongrass, garlic, ginger, and salt in a large saucepan and bring to a boil over high heat Reduce heat to medium-low; cover and simmer until chicken is no longer pink when cut, 30 - 40 minutes. Lift out chicken and let cool; reserve broth for the rice and sauces
  2. To make seasoned rice: Heat a clean large saucepan over high heat until hot. Add oil, swirling to coat sides. Add shallot, ginger, and garlic; stir-fry until fragrant, about 30 seconds Add rice and cook, stirring, for 2 minutes. Add 2 cups broth, and sesame oil. Bring to a boil; cover, reduce heat, and simmer until rice is tender and liquid is absorbed, about 20 minutes
  3. To make ginger sauce: Place all ingredients except cooking oil in a blender and process Heat oil in a small pan over medium heat. Add puree and cook, until slightly thickened, about 2 minutes. Set aside
  4. To make Chilli sauce: Place all ingredients except oil in a blender and process until smooth. Heat oil in a small pan over medium heat. Add puree and cook until slightly thickened, about 2 minutes. Set aside
  5. To serve, place rice in a wide, shallow serving bowl. Place chicken around rice. Serve with the sauces
