Halibut Fillet Wrapped in Asian Spiced Salmon Farce

  • Yield 4 servings
  • 4 Halibut fillet (skinless, 120 grams each)
  • Salmon Farce
  • 500 grams fresh Salmon (skinless, cut into cubes)
  • 6 Garlic cloves (sliced)
  • 4 Shallots (sliced)
  • 3 stalks Lemongrass (sliced)
  • 5 Kaffir lime leaves (chopped finely)
  • 100 grams Ginger (diced)
  • 1 whole Egg
  • 100 grams Coconut milk
  1. Sauté the garlic and shallots in butter until lightly brown
  2. Add in the lemongrass, kaffir lime leaves, and ginger. Continue cooking until for 5 minutes
  3. Blend all the sautéed aromatics with the diced salmon, coconut milk and egg until smooth Season to taste
  4. Season the halibut fillets with salt and pepper Spread the spiced salmon farce over the top of the fillet
  5. Bake for 6 minutes in a preheated oven at 180 degree celsius
