Halibut With Coconut Sauce

  • Coconut Sauce:
  • 2 tablespoons grape seed oil
  • 1 medium onion- thinly sliced
  • 1 tablespoon finely chopped ginger
  • 1 tablespoon coriander seeds, crushed
  • ¼ cup curry leaves
  • 1 green Chilli, seeds removed and minced
  • 1 cup coconut milk
  • A pinch of salt and pepper
  • Halibut:
  • 3 tablespoons grape seed oil
  • 170 grams halibut filets
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • A pinch of salt and pepper
  • Sauteed Peas:
  • 2 tablespoons butter
  • 1 teaspoon black mustard seeds
  • 1 cup fresh green peas, or frozen
  • A pinch of salt and pepper
  1. Coconut Souce
  2. Place a large skillet over medium-high heat and add the oil. When it's hot add the onion and ginger and cook until golden, about 3-5 minutes
  3. Add the coriander seeds, curry leaves and green Chilli and cook for 30 seconds
  4. Add coconut milk, turn the heat down to low and continue to cook until sauce has thickened, about 3-5 minutes
  5. Taste for seasoning and add salt as needed. Keep warm
  1. Halibut:
  2. Place a large non-stick skillet over medium-high heat and add oil
  3. Season the halibut filets with cumin, coriander, salt and pepper and place them in the pan
  4. Cook on one side for 4 minutes and then turn the heat down and continue to cook until they are done, 3-4 minutes. Keep warm
  1. Sauteed Peas & Assmbly:
  2. Place a small skillet over medium-high heat and add the butter
  3. When it begins to foam add the mustard seeds and cook until they begin to pop, about 1 minute. Add the peas and saute until they are bright green and tender-crisp, 3-5 minutes. Season with salt and pepper
  4. Ladle some sauce on each of 4 plates, place a halibut filet over it and garnish with sauteed peas
