Ingredients
  • 1 Egg
  • 50 grams quinoa
  • 1 tablespoon olive oil
  • 2 garlic cloves, chopped
  • 50 grams button mushroom
  • 20 grams spinach
  • Pepper, to taste
  • Salt, to taste
  • 1 slice toasted sourdough, for serving
  • 1 tablespoon plain yoghurt, for serving
  • Dukkah:
  • 50 grams toasted pistachio
  • 1 teaspoon sesame seeds
  • 1 teaspoon cumin
  • 1 teaspoon coriander seeds
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons brown sugar
  • 1 teaspoon chili flakes
Method
  1. Quinoa:
  2. Boil the quinoa until it expands. Then drain it. After draining, pour more water and boil until it's fully cooked
  3. While it's hot, season it with salt and pepper
  1. Poach Egg:
  2. Poach egg for 6 minutes
  3. After 6 minutes, put it in bowl of ice water to stop the cooking process.
  1. Mushroom and Spinach:
  2. Pour olive oil into a pan
  3. Sauté the garlic until it's fragrant
  4. Put in the spinach and mushroom
  5. Season with pepper and salt
  1. Dukkah:
  2. Blend all Dukkah ingredients
  1. Plating:
  2. Put the egg, mushroom, spinach, quinoa, toasted sourdough and yoghurt in a shallow bowl
  3. Sprinkle a little bit of Dukkah
  4. Ready to serve
