Hearty Veggie Stew with Couscous and Feta Cheese

  • 1 Eggplant
  • 1 large Zucchini
  • 1 Yellow or Red bell pepper
  • 1 Butternut squash or any small Pumpkin squash
  • 1 large can Whole plum tomatoes
  • 1 Onion
  • 3 cloves Garlic
  • Dried Oregano
  • Feta cheese
  • 200 grams Couscous
  • 200 millilitres boiling Water
  • Olive oil
  • Salt
  • Black pepper
  1. Pre- heat oven to 190C
  2. Cut eggplant, peppers, zucchini, pumpkin squash into bite sized pieces
  3. Chop onion and add to heated pan with olive oil, add chopped garlic and sauté for 5-8 min
  4. Add eggplant, sauté for 5 min, add pumpkin, zucchini then peppers. Sauté together for about 10 min
  5. Add tomatoes and oregano. Season with sea salt and bring to boil
  6. Transfer vegetables to oven safe dish. Bake for 15-20 min
  7. In a separate dish, pour 200ml boiling water to 200g of couscous
  8. Once vegetables and couscous are ready, serve with a topping of crumbled feta cheese
