Ikan Goreng Kicap

  • 1 whole Red Snapper
  • 4 tablespoons Turmeric Powder
  • 4 tablespoons Cornstarch
  • 1 cup Peanut Oil
  • 5 Shallots (thinly sliced)
  • 2 cloves Garlic (thinly sliced)
  • 1 tablespoon Ginger (finely chopped/grated)
  • 4 tablespoons Sweet Soy Sauce
  • 1 tablespoon Light Soy Sauce
  • 1 tablespoon Dark Soy Sauce
  • 200 millilitres Water
  • 2 teaspoons ground White Pepper
  • 2 Spring Onions (finely julienned)
  • 2 Red Chillies (deseeded and finely julienned)
  1. Slash both sides of the fish
  2. Dust with turmeric and cornstarch
  3. Heat peanut oil on high heat
  4. Fry the fish on high heat until crispy, then lower heat and cook until ready. Set aside
  5. Fry shallots, garlic and ginger until fragrant
  6. Mix liquid ingredients together and pour in the pan, reducing until thick
  7. Add the fish and turn over to coat and glaze
  8. Season with white pepper at the end and garnish with finely julienned spring onion and red chilli
