Ingredients
  • Pizza Dough:
  • 1 cup warm water
  • 1 teaspoon yeast
  • 1 teaspoon sugar
  • 2 cups of flour, plus 2 tablespoons for kneading
  • 1 teaspoon salt
  • 1 teaspoon ajwain
  • Indian Pizza:
  • 3 tablespoons olive oil
  • 1 onion, roughly chopped
  • 2 cloves garlic, chopped
  • 2 tablespoons of chopped ginger
  • 1 tablespoon garam masala
  • 1 teaspoon turmeric
  • ½ teaspoon smoked paprika
  • A pinch of salt and pepper
  • 454 grams fresh spinach leaves
  • 3 green onions sliced
  • ¼ cup chopped cilantro
  • 1 cup yellow cherry tomatoes, cut in half
  • 1 cup shredded mozzarella
Method
  1. Pizza Dough:
  2. You will need a 12" pizza pan or pizza stone
  3. Pour water into a large bowl, add yeast and sugar and stir to dissolve
  4. Let sit until yeast appears foamy, about 15 minutes
  5. Add 2 cups of the flour, salt and ajwain and stir with a fork until it comes together in a shaggy ball
  6. Knead it a few times in the bowl to incorporate the flour on the sides of the bowl and then turn it out onto a work surface
  7. Continue to knead the dough for a few minutes, adding the 2 tablespoons of flour if it seems wet and sticky
  8. Do not add a lot of extra flour here as the dough should be very soft and pliable. Pour a little olive oil into a clean bowl and smear it around the edges
  9. Rub it over the surface of the dough and then place into the bowl, cover with a towel and let rise in a warm place for 1 hour
  1. Indian Pizza:
  2. Preheat oven to 425°F
  3. Put the oil into a large skillet and add chopped onion, garlic and ginger
  4. Sauté until golden and soft and then add spices and salt and pepper. Add spinach leaves and stir until they have completely wilted
  5. Let cool slightly and add to a food processor and puree until smooth, so that it doesn't stick to the pan
  6. When dough is ready, pick it up and begin to stretch and pull it into a circle
  7. Press it onto a pizza pan, stretching the dough to the edges. Spread the spinach mixture evenly over the entire pizza
  8. Sprinkle the chopped cilantro and green onion over it and then add the tomato halves
  9. Cover with shredded cheese and place pizza on the bottom rack of the oven and bake for 25-30 minutes, until the crust is golden and crispy and cheese is bubbling
  10. Slice into wedges and serve.
