Individual Apple Dumplings With Cardamom Custard Sauce

  • ⅔ cup Ground Hazelnuts (or Almonds)
  • ½ cup Sugar
  • 3 tablespoons Unsalted Butter, cut into pieces
  • 1 tablespoon Hazelnut liqueur or Brandy
  • 1 teaspoon Vanilla Extract
  • 4 MacIntosh Apples, peeled and cored
  • 1-2 sheets frozen Puff Pastry, thawed but chilled
  • 2 tablespoons water, for brushing
  • Turbinado Sugar, for sprinkling
  • Cardmom Custard Sauce
  • 1 cup Half-and-Half Cream
  • 3 Green Cardamom Pods, lightly crushed
  • 1 teaspoon Vanilla Extract
  • 2 large Egg yolks
  • 2 tablespoons Sugar
  1. Preheat oven to 400 °F and lightly butter a baking dish
  2. In a food processor, pulse ground hazelnuts and sugar
  3. Add butter while pulsing, then add liqueur and vanilla, pulsing until a paste is formed
  4. Stuff center of each apple with hazelnut mixture
  5. Cut puff pastry into long strips, 1-inch wide
  6. Starting at base of each apple, wrap apple with pastry so that pastry overlaps just slight as it spirals around the apple
  7. Brush pastry with eggwash, sprinkle with Turbinado sugar and place in prepared dish
  8. Bake for 10 minutes, then reduce oven temperature to 375 °F and bake for about another 15 minutes, until pastry is a rich golden brown
  9. Serve dumplings warm with Cardamom Custard Sauce.Bring cream, cardamom and vanilla up to a simmer over medium low heat
  10. In a small bowl, whisk egg yolks and sugar
  11. Slowly pour warm cream over yolks while whisking and return mixture to pot
  12. Stir with a wooden spoon over medium-low heat until the custard coats the back of the spoon
  13. Strain sauce and chill until ready to serve
