Indonesian Style Fried Catfish with Green Chillies

  • 1 Catfish, whole
  • 2 teaspoons Turmeric powder
  • Salt, to taste
  • ¼ cup Rice flour
  • Sambal:
  • ½ cup Anchovies, fried
  • 10 Green chillies, fried
  • 5 Shallots, peeled
  • 3 Green bird’s eye chillies
  • Juice of 4 Calamansi
  • Salt, to taste
  1. Start by marinating the whole catfish with turmeric powder and salt. Set aside for 10 to 15 minutes
  2. In a deep pan, separately fry the anchovies, then green chillies and then the shallots until crispy, it is important you do it in that order
  3. After each ingredient is fried, strain the ingredient to remove excess oil and set aside
  4. Sprinkle rice flour over the fish and deep fry using the same pan until the fish skin is crispy
  5. To prepare the sambal, coarsely blend the fried anchovies, fried green chillies, fried shallots, green bird’s eye chillies and calamansi juice together. Season with salt and serve fresh on top of fish
