Ingredients
  • 1 tablespoon Vegetable Oil
  • 4-5 Red Chillies
  • 4 Lime Leaves,
  • 1 stalk Lemongrass
  • 3 centimeters Galangal
  • 3 centimeters Turmeric
  • 600 millilitres Coconut Milk
  • 500 grams White Fish such as Haddock, Blue Eye or Mussels
  • Sambal
  • 1 large Red Chilli
  • Pinch of smoked Chilli Powder
  • 30 grams Fresh Ginger
  • 1 bunch Basil
  • 1 handful Cherry Tomatoes
  • 2 fresh Limes
  • 1 bunch of Coriander
Method
  1. Slice, chop the aromats and sauté until fragrant. Add a little water followed by the coconut milk. Bring to the boil and then reduce to a simmer for 5 minutes.
  2. Add the fish or mussels and gently poach.
  3. Serve in a bowl with the broth, some coriander for garnish and the sambal
