  • Coconut Filling:
  • 150 grams grated Coconut
  • 200 grams Palm sugar (Gula Melaka)
  • 100 millilitres Water
  • 1 Pandan leaf, knotted
  • Coconut Crepes:
  • 200 grams All purpose flour, sifted
  • 4 Pandan leaves
  • 100 millilitres Water
  • 100 millilitres Coconut milk
  • 1 large Egg
  • 1 teaspoon Vegetable oil
  • ½ teaspoon Sea salt
  • Oil for greasing the crepe pan
  1. In a small pot, add water and palm sugar. Cook until dissolved
  2. Once cooked, add pandan leaf and grated coconut. Cook for 3 to 4 minutes until combined
  3. In a blender, blitz together 4 pandan leaves with water and then sieve through a sift to get pandan juice
  4. In a bowl, add all purpose flour, pandan juice, coconut milk, egg, oil and a pinch of sea salt. Mix well
  5. In a non stick pan, add a dash of oil and cook crepes using the mixture
  6. Once cooked, place the crepe on a working surface and add a table spoon of the coconut filling and roll into a spring roll
