Kuih Keria (Sweet Potato Donut)

  • 4 Sweet Potatoes, peeled
  • ½ cup Flour
  • 100 grams Tapioca flour
  • Pinch of Sea salt
  • 100 grams granulated Sugar
  • 4 tablespoons Water
  • Oil for deep-frying
  • Extra All-purpose Flour for dusting
  1. Steam sweet potatoes until cooked. Mash them and add salt. Slowly dust in mixture of all purpose flour and tapioca flour until it becomes a dough-like consistency
  2. Knead the dough for a few minutes and then divide into 8 balls. Make doughnut shapes
  3. In a wok, heat up oil and slowly fry the doughnuts for 8 minutes until golden brown. Drain on kitchen towel
  4. In a shallow pan, add water and sugar. Dissolve and make a syrup. Then, dip the doughnuts in the syrup until glazed on each side
