Ingredients
  • Orange Infused Lamb
  • 4 Lamb loin
  • 4 fresh Orange
  • Chic Pea Ragout
  • 100 grams boiled Chic peas
  • 100 grams Spinach leaves
  • 2 cloves sliced Garlic
  • 2 sliced Shallots
  • 8 Cherry tomatoes
  • 200 millilitres Chicken stock
  • 1 Lemon
  • 150 grams Butter
Method
  1. Lamb:
  2. Squeeze out the juice from the orange and pour over the lamb loins
  3. Allow to marinate for 1 hour in the refrigerator
  4. Season with salt and pepper
  5. Pan sear in a pan and cook for 5 minutes turning sides occasionally
  6. Remove from the pan and allow to rest for 5 minutes before slicing
  1. Chic Pea Ragout:
  2. Sauté the sliced garlic and shallots in a pan with some butter until lightly brown
  3. Add in the boiled chic peas and spinach and cook for 3 minutes
  4. Add in the zest of 1 lemon using a grater box
  5. Add in the chicken stock and simmer for 5 minutes
  6. Add in the butter and cherry tomato halves
  7. Season to taste
