Land Crab Coconut Dish

  • 2 cups grated Coconut
  • 1 head Garlic (chopped)
  • 1 Onion (chopped)
  • 1 small Ginger (sliced)
  • 8 Crabs (reserve the crab butter)
  • 2 cups Coconut cream
  • Salt and pepper
  1. In a large pot, add grated coconut, garlic, ginger, onions and crab butter. Mix well then turn on the heat
  2. Add the crab pieces and coconut milk. Mix for 1 minute to insure even distribution of flavour
  3. Add salt, stir once more and cover simmer for 15 minutes. Be sure that all the liquid is cooked off and the oil separates from the coconut cream
  4. When that happens the dish is ready to be served
