Lemongrass Clam Pasta

  • 500 grams Clams or Mussels
  • 3 sticks Lemongrass
  • 4 cloves Garlic
  • 2 Bird's eye chilli
  • 2 tablespoons Fish sauce
  • 1 tablespoon Sugar
  • Ground Pepper
  • 1 tablespoon Cooking oil
  • 200 grams Spaghetti pasta
  • 2 Red Bird's eye chilli
  • 1 stalk Spring onion
  1. Boil the pasta in a pot of boiling water. Add 1 tablespoon salt. Cook for 6-7 minutes
  2. Slice up lemongrass, garlic and bird eye chilli. Chop up spring onion
  3. In a pan, pour in cooking oil on medium high heat. Add in lemongrass, garlic and bird eye Chilli. Stir-fry for 1 minute, until the garlic turns translucent and lemongrass is soft. Add in fish sauce and a splash of water
  4. Pour in clams and cover with a lid. Cook the clams for 5 minutes, until the clams open up but remove any clams that are shut
  5. Add in spring onion and stir. Add in cooked pasta and mix it thoroughly
  6. Serve the pasta on plate and place clams on top Garnish with chopped spring onions
