Lime and Sea Salt Brownies

  • 150 grams unsalted Butter, plus extra for greasing
  • 300 grams light Muscovado sugar
  • 75 grams Cocoa powder
  • 150 grams Plain flour
  • 1 teaspoon Bicarbonate of soda
  • ¼ teaspoon flaky Sea salt (plus extra 1 teaspoon for garnish)
  • 4 Eggs
  • 1 teaspoon Vanilla extract
  • 150 grams Milk chocolate chips
  • Juice and zest of 2 Limes
  • Extra zest of 1 Lime for garnish (optional)
  1. Preheat the oven to 190C. Butter a 9" x 13" baking dish, then line with foil. Leave some foil hanging over the edges of the dish so it's easy to lift out the brownies later. Butter the inside of the foil as well
  2. Whisk the cocoa powder, flour, bicarbonate of soda and 1/4 teaspoon of the flaky sea salt together in a bowl
  3. Melt the butter with the zest of 2 limes and sugar in a saucepan, then add the dry ingredients and stir until combined. Take the pan off the heat
  4. Beat the eggs, lime juice and vanilla extract in a bowl or jug, then pour into the saucepan and mix together. Fold the chocolate chips in, then scoop the batter out into the prepared baking dish. Even out the top, then sprinkle the 1 teaspoon of flaky sea salt on top
  5. Bake for 20-25 minutes, but don't overcook the brownies, or they'll be dry instead of fudgy. Lift the brownies out of the pan and cool completely on a rack
  6. Cut into 12 pieces, and top with some extra lime zest if you like
