Linguini with Pine Nuts, Pistachio Pesto, Rocket & Goat's Cheese

Ingredients
  • 1 packet linguini
  • ¼ cup Extra Virgin Olive Oil
  • 2 cloves garlic
  • 1 chilli, chopped
  • 1 red onion, sliced
  • Salt and pepper
  • 150 grams bacon, chopped
  • 1 bunch parsley, chopped
  • 500 grams goats’ cheese
  • 500 grams rocket, chopped
  • Pesto:
  • ½ cup pine nuts, toasted
  • ½ cup pistachio nuts
  • 1 cup parmesan
  • 1 cup Extra Virgin Olive Oil
  • 1 bunch basil, picked
  • Pinch of salt and pepper
Method
  1. To make the pesto, blend the pine nuts, pistachios, basil, olive oil, parmesan cheese and a pinch of salt and pepper.
  2. Cook the pasta, as per the packet instructions.
  3. Sweat the garlic, red onion, chilli and pancetta. Just before you take this off the heat, mix through the parsley and rocket. Carefully place the pasta into the pan and fold it together until combined well.
  4. Plate up the linguini, and top with the pesto and goats cheese.
