Ingredients
  • 3 whole Lobster tails
  • 500 grams Young Jackfruit
  • 80 millilitres Coconut milk
  • 2 stalks of Lemongrass, bruised
  • 1 piece dried Tamarind
  • Salt and sugar to taste
  • Palm oil
  • 1 large Onion, blended
  • 1 clove of Garlic, blended
  • 1 inch Ginger, blended
  • 1 inch Turmeric, blended
  • 1 tablespoon Coriander seeds, blended
  • 1 teaspoon Cumin seeds, blended
  • 5 Red chillies
  • 6 Bird’s eye chilli
  • Water
Method
  1. Cut jackfruit into small pieces and boil till tender.
  2. Heat palm oil in a pot and sauté all the blended ingredients until fragrant. Add lemongrass, jackfruit and a bit of water
  3. Add lobster tails and let it simmer for 10 minutes
  4. Add coconut milk and bring to boil, add tamarind, salt and sugar. Serve with steamed rice
