Magic Sticky Toffee Pudding

  • 100 grams Muscovado sugar
  • 175 grams Self-raising flour
  • 125 millilitres Milk
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • ¼ teaspoon Cinnamon
  • ⅛ teaspoon Nutmeg
  • 50 grams melted unsalted Butter
  • 200 grams chopped Dates
  • For the sauce:
  • 200 grams Muscovado sugar
  • 25 grams unsalted Butter
  • 500 millilitres boiling Water
  1. Preheat the oven to 190C, and generously butter a baking dish with a 1.5litre capacity
  2. In a mixing bowl, whisk together 100g of muscovado sugar with the self-raising flour
  3. In a separate bowl or jug, beat the egg with the milk, vanilla essence and melted butter, then pour this into the dry ingredients
  4. Fold in the chopped dates, then scrape the batter out into the buttered dish
  5. Sprinkle over the 200g of muscovado sugar and dot with the unsalted butter. Pour the boiling water over the top of the pudding and carefully transfer to the oven
  6. Check the pudding after 45 minutes of baking, but if it's still too wet, give it another 5-10 minutes in the oven. Serve with cream or ice cream!
