Maja Blanca Pudding

  • 300 millilitres Fresh milk
  • 240 millilitres Coconut milk
  • 1 cup Corn kernels
  • 3½ tablespoons Cornstarch
  • 3 Egg yolks, beaten
  • ½ cup (120ml) Sugar
  • Handful Cornflakes
  • Pinch of Salt

Whisk the cornstarch, sugar and salt with 60ml milk. Add the eggs. Heat the remaining milk and coconut milk. Stir then pour into egg yolk mixture, whisk. Add corn kernels. Return to pan and cook for 3 to 4 minutes, until thickened, then cool covered in a bowl for 3 to 4 hours. To serve, whisk again and divide into glasses and chill for 3 to 4 hours. Top with crushed cornflakes
