Malaysian Spiced Fried Chicken

Ingredients
  • 7 Chicken Wings
  • 4 Shallots
  • 2 cloves Garlic
  • 2 Chillies
  • 1 centimetre Ginger
  • 1 tablespoon Curry powder
  • 1 teaspoon Turmeric powder
  • A handful of Curry leaves
  • 1 tablespoon Corn flour
  • 1 tablespoon Salt
  • 4 cups of Vegetable oil for frying
Method
  1. In a blender, blitz shallots, garlic, chillies and ginger into a chunky spice paste (not pulp)
  2. In a bowl, add chicken wings, spice paste, curry leaves, curry powder, turmeric powder, corn flour and salt. Mix well and marinate for at least 30 minutes
  3. In a wok add oil and fry chicken for 3 minutes on each side until golden brown
