  • 500 grams cream cheese
  • 1½ cup whipping cream
  • 1 cup icing sugar (sifted)
  • 6 limes (zested and juiced)
  • 2 cups mango (diced)
  • 1 cup digestive biscuits (crushed)
  1. Whisk the cream cheese with ice sugar, lime juice and zest until light.
  2. Whisk the single cream separately.
  3. Fold the cream cheese mixture and whipped cream together.
  4. Layer diced mango, cream cheese mixture and digestive biscuits in a glass. Serve chill.
