Mango Pulut Hitam

  • Yield 4 servings
  • 1 cup Black glutinous rice, soaked overnight
  • 150 grams Gula melaka (Palm sugar), chopped
  • 5 Pandan leaves, tied into a knot
  • 1.5 litres Water
  • A pinch of Salt
  • 2 Mangoes, cubed
  • 200 millilitres Coconut cream or coconut milk, to serve
  1. Drain the rice, then place into a large pot with the water, salt and pandan leaves. Bring to a boil, then lower the heat and simmer for 1 hour
  2. Stir frequently, checking to make sure the rice doesn’t stick to the bottom. Add more water if you need to
  3. After 1 hour, add the gula melaka and simmer for another 30 minutes. Cook until it has reached the desired consistency
  4. Serve with the cubed mango on top and drizzle with coconut cream
