Mango Sago Pomelo

  • Yield 4 servings
  • 800 grams diced Mango cubes (about 4 mangoes) - divided into 300g and 500g
  • 360 millilitres Caster sugar
  • 360 millilitres Water
  • 100 grams dried Sago
  • 100 grams Pomelo, membrane peeled off and segments separated
  • 100 millilitres Evaporated milk
  1. In a saucepan, combine the caster sugar and water and heat until a boil, stirring to dissolve the sugar. Set aside to cool
  2. Boil the sago in plenty of boiling water, stirring to make sure it doesn't stick. After cooking for 10 minutes, turn off the heat and let the sago sit in the hot water for another 5 minutes to cook through. Drain and rinse with cold water. Pour the syrup over the sago and set aside
  3. In a blender or food processor, blend 500g of the mango cubes with the evaporated milk until smooth
  4. Mix the mango puree with the sago and syrup, then add most of the mango and most of the pomelo. Stir to combine
  5. Chill the mixture in the fridge for at least 1 hour, until cold. Serve in bowls, topped with the remaining mango cubes and pomelo
