  • Maple Date Short Ribs:
  • 1 cup red wine
  • 1 cup maple syrup
  • ½ cup vegetable stock
  • ½ cup chopped dates
  • 2 tablespoons fenugreek seeds
  • 2 teaspoons mustard seeds
  • ¼ cup dried curry leaves
  • A pinch of salt
  • A pinch of pepper
  • 1 rack of short ribs
  • Green Beans with Cilantro:
  • 2 tablespoons grape seed oil
  • 1 teaspoon minced garlic
  • 1 teaspoon fennel seeds
  • 454 grams green beans, ends removed
  • ½ cup chopped cilantro
  • Pinch of salt
  1. Maple Date Short Ribs:
  2. Preheat oven to 350°F
  3. Put the wine, maple syrup, stock, dates, spices and salt and pepper into a small saucepan and bring to a boil
  4. Turn heat down and simmer until the dates are soft, about 15 to 20 minutes
  5. Puree with an immersion blender, let cool and reserve a half cup
  6. Place the ribs in a pan large enough to accommodate them in a single layer
  7. Pour over the marinade, cover with plastic wrap and refrigerate for up to 3 hours
  8. Wipe excess marinade from ribs, put them onto a baking sheet and bake for 1 hour, until ribs are very tender
  9. Serve with Green Beans with Cilantro

  2. Heat oil in a skillet and add garlic and fennel seeds
  3. Cook for about 30 seconds and then add green beans
  4. Season with salt and saute quickly until beans are bright green and tender-crisp
  5. Spill into a serving bowl, sprinkle with chopped cilantro, toss and serve
