  • Marmite Toad
  • 4 Frog
  • 3 tablespoons Marmite
  • 4 tablespoons Brown sugar
  • 200 millilitres Chicken stock
  • 50 grams Butter
  • Black Bean Rice
  • 200 grams Cooked rice
  • 100 grams Black beans
  • 5 cloves sliced Garlic
  • 3 sprigs Coriander stems
  • 2 sliced Shallots
  • 2 Red chillies
  1. Marmite Toad:
  2. Portion out the toad and fabricate into desired cuts.
  3. Season with salt and pepper and pan fry in a pan until brown
  4. Add in the marmite, sugar and chicken stock and cook until a glaze consistency and the toad legs are coated
  5. Add in the butter and set aside
  1. Black Bean Rice:
  2. Sauté the garlic and onions until brown
  3. Add in the black beans and the rice and toss everything together and cook for 5 minutes
  4. Dice the red Chilli, slice the coriander and add into the rice and season to taste
