Ingredients
  • 100 grams Purple Sweet Potatoes
  • 100 grams Yellow Sweet Potatoes
  • 4 tablespoons Coconut cream
  • Topping:
  • 1 Yellow Pepper , diced
  • 1 Red Pepper, diced
  • 100 grams Corn
  • 100 grams Peas
  • 100 grams Crab claw, poached first
  • 1 qua Zuchinni, diced
  • 100 grams Carrot, diced
  • 100 grams Mushroom, chopped
  • 100 grams Celery, finely chopped
Method
  1. Steamed the purple & yellow sweet potatoes, then finely grated
  2. Add 2 tablespoons coconut cream to each potato
  3. Saute all the toppings ingredients, set aside.
  4. Seasoned well the mash potatoes with salt and pepper (and coconut cream)
  5. Layer the mash in the martini glass
  6. Decorate with the toppings
