Mediterranean Tuna Salad on Toast with Hummus

  • 1 can or jar of Tuna packed in olive oil
  • ½ cup Black olives
  • 3 stalks Fresh dill
  • 2 stalks Italian parsley
  • 1-2 teaspoon Olive oil
  • 1 Lemon
  • ¼ cup Hummus
  • 2 slices Bread (sourdough or whole wheat Italian)
  • 1 shallot
  1. Drain tuna and add to a mixing bowl
  2. Add sliced shallot, chopped herbs, lemon juice, olives, olive oil, and pinch of sea salt
  3. Mix until combined
  4. Toast bread
  5. Spread hummus on each slice and top with tuna salad
