Mee Goreng Siam

Ingredients
  • 4 tablespoons Vegetable oil
  • 6 Shallots
  • 2 cloves Garlic
  • ½ tablespoon dried Chilli paste
  • 1 tablespoon Fermented bean paste
  • 1 tablespoon Dried Shrimp
  • 200 grams fresh Tiger prawn, peeled
  • 150 grams Fish cake
  • Tofu
  • 2 tablespoons Soy sauce
  • 1 packet Vermicelli rice noodles (Bee Hoon)
  • 1 cup Bean sprouts
  • 1 cup Spring onions
  • 1 Egg
  • 1 litre Water
  • Salt
  • Brown Sugar
  • Garnish:
  • A handful of fried Shallots
  • 1 Red chilli
  • Spring onions
  • 4 Calamansi limes
Method
  1. In a pot, bring hot water up to a boil and cook vermicelli noodles as per packet instructions
  2. Blitz together shallots, garlic and dried shrimp until it becomes a pulp
  3. In a wok, add oil, and wait until pan is very hot and smoking. Add the ground up ingredients and fry for a couple of minutes
  4. After the sides start to caramelize, add chilli paste as well as the fermented bean paste and fry for another minute
  5. Add the prawns and sliced fish cakes. Fry for another 2 minutes before adding the soy sauce and sugar
  6. Add the cooked noodles and stir fry for another 2 minutes before adding the bean sprouts and spring onions
  7. Taste and adjust if necessary
  8. Crack and beat 1 egg. Make an omelette in a non stick pan
  9. Roll the omelette and slice into long strips. Set aside
  10. Plate up the noodles and sprinkle the egg on top. Garnish with sliced chilli, spring onions and crispy shallots. Serve with a squeeze of kalamansi lime
