Ingredients
  • 300 grams Mackerel
  • ¼ piece Coconut, grated
  • 3 tablespoons Cooking Oil
  • 3 cm Lemongrass
  • 7 Lemongrass Stick
  • 5 Candlenut, roasted
  • 2 Lime Leaves
  • 5 Chillies
  • 1 cm Turmeric
  • 7 Shallot
  • 3 Garlic
  • 65 milligrams millilitres Coconut Milk
  • 1 tablespoon Coriander
  • Salt
  • Pepper
  • Sugar
  • Cherry Tomatoes and Fried Chilli Paste for garnish
Method
  1. Blend: shallot, garlic, chilli, turmeric, lemon grass, candlenut, lime leaves, cooking oil
  2. Saute the blended ingredients
  3. Put it in a bowl
  4. Add salt, sugar, and pepper
  5. Add coconut milk. Set it aside
  6. Mince the mackerel
  7. Mix the minced mackerel and blended ingredients.
  8. Add grated coconut. Mix it well
  9. Wrap one big full tablespoon of the mixture around the lemon grass. Rotate it a bit until it covers the whole part completely
  10. Add a bit of oil onto a grilled pan
  11. We put three satays first
  12. We cook them using medium heat, so the inside will be cooked as well
  13. Serve in a glass with cherry tomatoes and fried sambal
